For the microbioligical protection of the mash it's pH value should be set to 2.8-3.2. Litmus paper is often painted by the mash (especially by fruit mashes), therefore it is not always suitable for measurement. Additionally, for adequate measurements the temperature should be 20 C degree, which is difficult to ensure in home environment. The digital pH meter measures the temperature and does the necessary calibrations to indicate the exact pH value.
Important! The pH meter must be calibrated before each measurement. Calibration should be carried out with buffer liqvid. There are 2 calibrition liqvids in aluminum foil bags next to the pH meter.
